As preparações pré-festival Sicoob Sabor 2019 estão a todo o vapor. No sábado, 27 de abril, os participantes da edição colocaram o toque, o dólmã e o avental para uma aula com os chefs consultores. O curso de “Técnicas de Preparação Culinária” aconteceu na cozinha do Senac Vilhena, parceiro do festival, onde os participantes acompanharam tudo o que os chefs ensinavam.
O treinamento começou com o chef Manoel Evangelista, que trabalha na área da gastronomia há mais de 20 anos, dentro da sala de aula e seguiu para a cozinha onde os esperavam os chefs especialistas em comida regional, Oda Ribeiro e Anderson Pilonetto, e a chef Geane Rodrigues, mestre em panificação e especialista em gastronomia amazônica, que formam a equipe de consultores do Sicoob Sabor 2019.
Segundo Evangelista, o objetivo do treinamento foi apresentar aos cozinheiros a fusão da comida regional com outras culinárias, mostrando técnicas que vão desde o corte dos alimentos até a finalização e montagem dos pratos. “É importante que saibam que podemos agregar dentro da gastronomia a essência da nossa região, valorizando o nosso produto e a apresentação para trazer algo inovador. Mostrar que temos essa essência e que ela é de muita importância”, definiu o chef.
No total foram oito horas de aprendizado, com a preparação de treze pratos. Dentre eles, o ceviche de banana pacovã com redução de tucupi foi um dos destaques. Outro prato que chamou a atenção dos participantes foi o ravioli de tucumã com recheio de tambaqui ao molho pesto, preparado pela chef Geane Rodrigues.
